Ground spice is the hardest product in food to pack well. It is hygroscopic, volatile-oil bearing, light-sensitive and abrasive — all at once. Everything that makes a spice worth buying — the pungency of chilli, the warmth of garam masala, the citrus lift in cardamom — comes from essential oils that make up a fraction of a percent of the product by weight. Those oils are what leave the pack.
A consumer who opens a masala pouch and finds it smells of nothing has not bought a spoiled product. Chemically, almost nothing has happened to the powder. What has happened is that the aromatic compounds have oxidised, or permeated out through the film, or been absorbed into the sealant layer itself. The powder is still there. The reason someone paid for it is not.
This is why spice packaging is specified differently from almost every other dry food. A rice pack is a mechanical problem — will it hold five kilos without bursting. A biscuit pack is a moisture problem — will it stay crisp. A spice pack is a permeation and oxidation problem, and the answer sits in the barrier layer, not in the film thickness.
Colour is the second half. Curcumin in turmeric and capsanthin in chilli both degrade under light. A brand that ships bright yellow turmeric and finds it dull mustard after four months on a lit retail shelf has a light barrier problem, and there is only one layer in commercial flexible packaging that stops light completely.
What follows is how we specify material across the spice range — whole, ground, blended, oily and bulk — with the barrier data behind each recommendation.
Each of these arrives as a customer complaint months after dispatch, which is what makes them expensive. By the time you know, the stock is already in the market.
The most common failure, and almost always a barrier choice made on price. A metallised structure that costs less per kilogram will hold aroma for three or four months and then stop. If your product sits in distribution for two months before it reaches a shelf, you have given away most of your shelf life before the consumer sees it.
Turmeric and chilli are photosensitive. Modern retail lighting is intense and continuous. Any transparent or partially transparent pack face is a fade path, which is why a product-visibility window on a turmeric pouch is a design decision with a shelf-life cost attached.
Ground spice is hygroscopic. It pulls moisture from the atmosphere, cakes into lumps, and stops free-flowing — which is a visible quality complaint even though the product is perfectly safe. In humid distribution, a marginal water vapour barrier turns into a caked pack within one monsoon cycle.
The failure nobody specifies for. Fine spice powder becomes airborne during filling, settles in the seal area, and contaminates the heat seal — producing a pack that looks sealed and is not. It shows up as a leaker rate, not as a packaging complaint, so it often gets blamed on the machine. Sealant selection and seal profile both affect how tolerant the pack is to contamination.
Clove, cardamom, black pepper and oil-rich blends carry oleoresins that attack conventional lamination adhesives over time. The laminate separates, usually starting at the seal edge, months into the shelf life. High-performance adhesive systems exist precisely for this and should be specified for oil-rich blends rather than discovered after a failure.
Less understood than the others and genuinely underrated. The inner polyethylene layer can absorb aromatic compounds directly out of the product — the aroma never leaves the pack, it simply migrates into the film. It is a sealant chemistry and thickness question, and it is one reason a heavier sealant is not automatically a better one for aromatic products.
Grouping spices by how they behave in a pack rather than by botanical family. Each structure below is a starting point, adjusted to your fill weight, shelf-life target and filling line.
The highest-risk category in spice packaging. Grinding multiplies surface area, which accelerates every degradation path simultaneously — oxidation, moisture pickup and volatile loss. Turmeric and chilli add photosensitivity on top. Foil is the correct specification here rather than the premium one; metallised is the compromise you take knowingly when the shelf life target is short.
A blend carries several volatile profiles at once, and they degrade at different rates — which is why a garam masala does not simply get weaker with age, it changes character as the lighter top notes go first and the heavier base notes remain. Blends also frequently include oil-bearing components, so adhesive selection matters as much as barrier selection.
Lower surface area means slower degradation, so the barrier requirement eases — but the mechanical requirement tightens. Cloves, cardamom pods, cinnamon bark and black pepper are hard and irregular, and they abrade or pierce a thin sealant during transit and handling. This is also the category where consumers most want to see the product, which pushes specification toward transparent or windowed structures.
Once oil enters the formulation the problem changes from permeation to chemical resistance. Free oil attacks polyethylene sealants and conventional adhesives, and acidic pickle masala accelerates it. Cast polypropylene is the sealant of choice here because it resists oil migration and holds seal integrity where PE softens.
Seasonings supplied to snack manufacturers, instant food processors and institutional kitchens are packed for a different buyer — one who opens the pack in a production environment rather than a kitchen. Formats run larger, print requirements are simpler, and batch traceability on the pack matters more than shelf appeal. Free-flow agents in the formulation also change how the powder behaves at the seal.
Five to twenty-five kilogram packs for traders, processors and repackers. Barrier still matters — bulk spice often sits in a warehouse longer than retail stock ever does — but the pack now has to survive stacking, forklift handling and long storage. Heavy sealant, high bond strength and a liner-in-bag construction are standard. Print is functional rather than promotional.
Six buyer types, each with a different pressure on the specification. The material is the same family; what changes is which constraint dominates.
Volume buyers running high-speed form-fill-seal lines. The dominant constraint is machine performance — web tension, seal window and dusting tolerance decide whether a laminate runs at rated speed or at seventy percent of it. Consistency reel-to-reel matters more than any single specification.
Shelf presence and colour fidelity carry the same weight as barrier. Brand colours must reproduce identically across four reorders in a year, which is a print consistency problem that cylinder-based rotogravure handles better than the alternatives.
Multiple brand owners, multiple artworks, shared production lines. The requirement is a stable base structure that stays constant while artwork changes, so cylinder cost is the only variable between SKUs rather than a full requalification.
Long transit and long warehouse dwell before the product reaches its final buyer. Shelf life has to be specified against total time in the chain, not time on a shelf, which usually pushes the structure to foil regardless of what the retail equivalent would use.
Larger pack sizes for hotels, caterers and cloud kitchens. Reclose matters because the pack is opened repeatedly over weeks, and mechanical robustness matters because it is handled in a working kitchen rather than a home.
Kraft-look outer webs and matt finishes are near-standard in this segment, with the barrier hidden inside the laminate rather than shown on the surface. Pack sizes are smaller, order quantities are lower, and recyclability claims are frequently part of the brand promise — which makes structure selection a positioning decision as much as a technical one.

Transparent PET/PE is the cheapest laminate on this table and it is still used for ground spice by packers competing purely on price. The oxygen number is roughly two hundred times the foil figure. That is not a marginal difference in shelf life — it is the difference between a product that smells like masala at month nine and one that does not smell like anything at month two.
Most shelf-life failures we are asked to diagnose are not barrier failures. They are arithmetic failures — a six-month structure chosen for a product that spends two months in distribution, one month in a warehouse and then expects six months of retail life. Count the whole chain before choosing the barrier.

Spice is one of the few retail categories where the pack colour and the product colour are doing the same job. Get the print wrong and the shelf communicates the wrong thing before anyone reads the label.
Rotogravure is cylinder-based. There is a one-time cylinder cost per design, but once engraved, the fourth print run matches the first. For a masala brand reordering the same artwork every quarter, that consistency is the entire argument — a shade drift between batches puts two versions of the same product side by side on a shelf.

Gloss reads mainstream and value; matt reads premium; soft-touch matt has become the default for organic and D2C spice brands. Registered matt-gloss — matt background with gloss only on the product image or logo — is the most effective single upgrade for a mid-market masala brand trying to move up a shelf tier without changing the structure.
Metallised structures also give a metallic sheen through the print, which can be used deliberately for gold and copper brand elements.
A transparent window sells whole spice — it is the fastest way to communicate quality on cumin seed or cardamom. On ground turmeric or chilli, the same window is a fade path. If the brand requires a window on a photosensitive product, keep it small, place it on the reverse face, and accept a shorter colour shelf life as the cost.
Indian retail spice packs carry mandatory declarations — the vegetarian mark, net quantity, batch and manufacturing details, FSSAI licence number of the food business operator, and nutritional information where applicable. Build the artwork around that block rather than fitting it in afterwards; late-stage repositioning is the most common reason a spice cylinder gets re-engraved.
There is no fixed SKU shelf. Spice packaging is specified against your product, your grind, your machine and your shelf-life target.

Spice packaging is food-contact material and your buyer's QA team will treat it that way. Here is what we run and what we can document.
In India, food packaging material is governed by the Food Safety and Standards (Packaging) Regulations, which set out the material and migration requirements a food-contact pack must satisfy. Those requirements apply to the material specification — a packaging converter is not "FSSAI certified" in the way a spice processor is licensed, and any supplier claiming otherwise is describing something that does not exist.
What we can do is manufacture to the structure and material class your product requires, under ISO 22000:2018, and supply the material information your QA team needs for its own compliance file. If your specification calls for a particular test or declaration, raise it at the inquiry stage and we will confirm in writing what we can provide.

For ground spices and blended masala, an aluminium foil laminate is the correct specification — typically PET 12µ / Alu 9µ / PE 80µ. Aluminium foil is the only layer in commercial flexible packaging that is a total barrier to oxygen, moisture, light and aroma migration, and spice degradation runs through all four paths. For whole spices, where surface area is lower and degradation is slower, a metallised structure such as PET 12µ / Met-PET 12µ / LLDPE 100µ is usually sufficient and costs less. Transparent structures should not be used for ground spice on any meaningful shelf life.
Three separate mechanisms, and they are often confused. First, oxidation — oxygen entering through the film reacts with the essential oils that carry aroma. Second, permeation — the volatile compounds pass out through the film, which is why a weak barrier loses aroma even in a sealed pack. Third, aroma scalping — the inner polyethylene sealant absorbs aromatic compounds directly out of the product, so the aroma never leaves the pack but is no longer available to the consumer. A foil barrier addresses the first two completely; the third is managed through sealant selection and thickness.
PET 12µ / Alu 9µ / PE 80µ. Turmeric has a specific problem the other spices do not: curcumin, the compound responsible for its colour, degrades under light. A structure that handles oxygen well but lets light through will hold the aroma and lose the colour, and colour is what the consumer judges turmeric on at the point of purchase. Aluminium foil is a total light barrier, which is why it is the standard rather than the premium option here. If the brand requires product visibility, place the window on the reverse face and keep it small — every square centimetre of window is a fade path.
As working guidance, an aluminium foil structure supports twelve months or more of meaningful aroma retention on ground spice; a metallised PET structure supports six to nine months; a metallised BOPP structure four to six months; a transparent structure is not appropriate for ground spice at all. These are planning figures, not guarantees — actual shelf life depends on the spice, the fineness of the grind, moisture content at fill, the fill environment and storage conditions. The reliable way to confirm a target for your own product is an accelerated shelf-life study in the actual structure.
Whole spices have far lower surface area than ground spice, so they degrade more slowly and the barrier requirement eases — a metallised structure such as PET 12µ / Met-PET 12µ / LLDPE 100µ is usually adequate. What tightens instead is the mechanical requirement. Cloves, cardamom pods, cinnamon bark and black pepper are hard and irregularly shaped, and they abrade or puncture a thin sealant during transit. A heavier sealant of 100 microns or more is standard. Whole spice is also the category where consumers most want to see the product, so windowed pouches are common and acceptable here in a way they are not for ground turmeric or chilli.
Moisture. Ground spice is hygroscopic — it pulls water vapour from the surrounding atmosphere, and once the moisture content rises past a threshold the powder binds into lumps and stops free-flowing. The moisture either enters through the film, which is a water vapour transmission problem solved by the barrier layer, or it was already in the product at fill, which is a process problem upstream of packaging. Caking is a visible quality complaint even though the product remains perfectly safe, and it is the single most common consumer-facing failure in humid distribution. A foil structure with a WVTR below 0.1 effectively removes the packaging side of the problem.
Indian retail masala runs across a wide range and the format changes with it. Sachets of 5 to 20 grams are three-side seal, used for single-use and trial packs. Retail packs of 50 to 200 grams are typically centre seal pouches, which run fastest on vertical form-fill-seal lines. Packs of 100 grams to 1 kilogram move to stand-up pouches with a zipper, since the consumer opens them repeatedly. Bulk and trade packs of 5 to 25 kilograms use heavy-sealant liners built for stacking. The format decision follows the filling machine as much as the fill weight.
Aroma scalping is the absorption of aromatic compounds from the product into the packaging film itself, usually into the inner polyethylene sealant layer. It is distinct from permeation — nothing escapes the pack, but the aroma migrates into the film and is no longer released when the consumer opens it. Polyethylene is more prone to scalping than cast polypropylene, and thicker sealants absorb more than thin ones, which is one reason a heavier sealant is not automatically better for aromatic products. For highly aromatic blends it is worth discussing sealant chemistry rather than defaulting to standard LDPE.
Once free oil is present the problem shifts from permeation to chemical resistance. Oil softens polyethylene sealants and, over months, oleoresins from clove, cardamom and pepper attack conventional lamination adhesives — producing delamination that usually starts at the seal edge. The standard answer is PET 12µ / Alu 9µ / CPP 60µ: cast polypropylene resists oil migration and holds seal integrity where polyethylene does not, and a high-performance adhesive system is specified rather than a standard one. This should be decided at specification stage, because delamination shows up months after dispatch.
Bulk packs of 5 to 25 kilograms carry a barrier requirement that is often underestimated, because bulk spice frequently sits in a warehouse longer than retail stock ever does on a shelf. A structure such as PET 12µ / Alu 9µ / LLDPE 120µ is typical — the barrier matches a retail foil pack, but the sealant is substantially heavier to handle stacking load, forklift handling and the abrasion of a large fill. Bond strength between layers matters more here than on any retail format, since a bulk pack failure is a full consignment loss rather than a single unit.

Finish options include gloss, matt, soft-touch matt, spot gloss and registered matt-gloss. Artwork is pre-press checked and colour-proofed before the cylinder is engraved.
Conventional spice laminates combine polyester, aluminium and polyethylene, and those layers cannot be economically separated, so they generally go to energy recovery rather than material recycling. Mono-material structures are the route where recyclability is a brand commitment — an all-polyethylene laminate is recyclable through PE streams, with barrier recovered through metallisation or coating rather than by mixing polymer families. Mono-material PE structures are available on request. The honest trade-off is that they deliver a lower barrier than foil, so the shelf-life target has to be re-checked before switching. For ground turmeric and chilli in particular, the loss of a total light barrier is a real cost that should be weighed rather than assumed away.
Minimum order quantity depends on the structure, whether the job is printed or unprinted, and how many designs are involved, because cylinder cost is amortised across the run. Unprinted laminate carries a lower minimum than custom-printed material, and repeat orders against an existing cylinder set are lower again than a first run. Rather than publish a number that will not match your job, we confirm MOQ against your specific structure and artwork at the inquiry stage.
